A PDF has no paragraphs — it stores each visual line as its own run of text positioned on the page. Copying reproduces those hard breaks, so a paragraph arrives as eight separate lines that will not reflow when you paste it somewhere with a different width.
Not if you keep the paragraph option enabled. Single line breaks within a paragraph are joined while blank lines separating paragraphs are preserved, which is almost always what you want. Removing every break turns an entire document into one continuous block — occasionally useful, usually not.
