Retyping. If you collect applications, orders or surveys as filled PDF forms, the answers are trapped in individual files. Exporting field names and values to CSV or Excel gets them into a spreadsheet you can sort, filter and analyse rather than opening each document in turn.
Only on real interactive forms, where the answers live in form fields. A form that was printed, filled by hand and scanned contains no fields — just an image of writing — so there is nothing to extract. Those need OCR, and handwriting recognition is unreliable at best.
Whatever the form’s author called them internally, which is sometimes clear and sometimes not — you may see tidy names or things like Text1 and CheckBox3. The values are correct regardless; you may just want to rename columns once in your spreadsheet if you are processing many identical forms.
